This bundle pairs our Solo Olives SOLO Terra e Tempo – Selezione, an early-harvest extra virgin olive oil from Umbria, with Aceto Balsamico Tradizionale di Modena DOP aged over 12 years. One is vibrant, green, and alive. The other is patient, rounded, and shaped slowly in wood.

In Modena, Paolo Vecchi and his son Jacopo carry forward a tradition where time is the only ingredient that matters. Using cooked grape must from local vineyards, their balsamic moves through a succession of wooden barrels, gaining depth without shortcuts.

The result is a refined balsamic with gentle sweetness, balanced acidity, and a long, clean finish.

Together, they reflect the same philosophy behind SOLO: origin, discipline, and respect for time.
