Harvested early, pressed the same day, bottled at the source, shipped immediately. This is a once-a-year release. Bright, green, distinctly peppery. You don’t cook with this. You finish with it.

Flavor
Herbaceous and fresh. Fruity upfront with a peppery finish. Notes of artichoke, green tomato, and chicory. Best used to finish: pasta, tomatoes, fish, salads, burrata, bread.

From the Vecchi family acetaia, where time is the main ingredient.
In Modena, balsamic is not produced — it’s raised. Paolo Vecchi and his son Jacopo oversee a process that begins with a single raw material: cooked grape must from local vineyards. No additives. No shortcuts. What follows is patience measured in decades.
The liquid moves slowly through a sequence of wooden barrels — oak, cherry, chestnut, juniper. Evaporation, seasonal temperature swings, and time itself do the work.
Two Editions
Affinato — 12 years aged
Extravecchio — 25 years aged
Both made only from cooked grape must. Nothing added. Nothing rushed. Same standard as our oil — you know where it comes from, who made it, and how long it took.
