Single grove. Early harvest.
We tend two groves in the hills of Umbria. Every bottle is traced to just one, never blended, never mixed. Harvested early while the fruit is still green, pressed within hours, and flown to the United States for freshness. The result is two distinct oils.

The bold one · Paciano
Olio Nuovo
The first oil of the season, poured unfiltered and naturally cloudy. Vivid green, intensely herbaceous, with pronounced bitterness and a bold peppery finish. This is the oil chefs and connoisseurs wait all year for. Pour it raw over mozzarella, grilled bread, tomatoes, or a finished pasta.

Early harvested, then double filtered for clarity and stability. Refined and balanced, fresh green fruit, gentle bitterness, and a clean pepper finish. All the quality of an early harvest, in a smoother, more versatile everyday oil that keeps beautifully.

The Balsamic · Modena, Italy
Aceto Balsamico Tradizionale
From the Vecchi family acetaia, AcetoModena where balsamic is not produced but raised. Cooked grape must from local vineyards, aged through a sequence of oak, cherry, chestnut, and juniper barrels. No additives, no shortcuts, patience measured in decades. The same standard as our oil.
