Growers

Two groves, one harvest. Jury Presenti farms Colli del Trasimeno and in 2026 won the Forbici d’Oro, Italy’s national olive pruning championship. Stijn Taillieu farms Paciano and manages the grove year round. Pruning determines what a tree can give you eighteen months later, which is why we name the person doing it.

Every bottle in every pack is single origin. The mixed selection puts two oils side by side in one box, three bottles from each grove. It does not blend them.

Process

Olives picked green, before full maturation. Washed, pressed, and gently kneaded at Frantoio Olivestri by Paolo Vestri the same night they are picked. The mill presses every night through harvest, so no fruit sits overnight. Separated by dual centrifugation and stored under nitrogen. Bottled in Italy and air freighted to the United States, never sea freighted.

Tasting notes

Golden green. Fresh herbs and green almond on the nose. Artichoke on the palate, bitterness in balance, and a clean peppery finish.

Both groves share that profile this harvest. The difference is intensity, not character. Olio Nuovo Paciano is unfiltered and carries a lot more flavor, which is why it tends to be the one poured raw at the table. Colli del Trasimeno is filtered and easier to reach for every day.

Use

Raw. Bread, salads, grilled vegetables, fish. Early harvest oil is at its best where you can taste it.

Every SOLO harvest is tested and the full panel is published at soloolives.com/chemical-profile. The 2026 results post after pressing in October. For reference, the 2025 harvest came in at 337 mg/kg polyphenols, 0.13 percent free acidity, 2.79 peroxide value, and zero median defect, and was awarded a Silver Quality Award at the London International Olive Oil Competition, judged blind.
