Jury didn’t set out to be a producer. He set out to understand the tree.

He’s a certified olive pruner, trained by the Scuola Potatura Olivo, the Italian school dedicated to the craft of caring for olive trees. He teaches other growers. When he walks into a grove, he’s not just thinking about the harvest coming. He’s thinking about what the canopy needs, what the soil is telling him, how this season’s rain will carry into next year’s fruit.

The Best Pruner in Italy

Jury recently won the national potatura contest — Italy’s top competition for olive tree pruning. In a country where pruning is considered a high art, that is not a small thing. It means he is, officially, the best in Italy at reading a tree and deciding what it needs.

He doesn’t mention it unless you ask.


The Grove

His groves sit in the hills around Petrignano del Lago, within 2 km of each other, about 12 km from Lake Trasimeno. From the hillside you can see Cortona. On clear days, the Apennines. The lake and the mountains together shape the microclimate: the precipitation, the temperature swings, the way the fruit matures. Jury knows this the way you know your own house.

He grows Frantoio, Leccino, Moraiolo, and Pendolino — the native cultivars of Umbria, registered under the DOP Umbria Colli del Trasimeno. He manages the land with what he calls agroecology: no synthetic inputs, attention to soil health and canopy structure.


How He Thinks About the Harvest

Jury knows his oil changes every year. In 2024, his groves yielded 6%. In 2025, 13%. He can tell you exactly why: the weather, the ripeness window, the timing. He knows that a shorter milling time brings out more pepper, that earlier harvest means less fruit and more intensity.

He thinks about these things the way most people don’t think about anything.


How We Found Him

The night he was explaining all of this over WhatsApp, customers from Belgium showed up at his door wanting to buy oil for Christmas gifts.

This year, Jury Presenti joins SOLO for the first time.
