Once the olives leave the grove, this crew takes over. Paolo Vestri, his father Paolo Senior, Jury Presenti, and the team at Frantoio Olivestri are the ones who turn the harvest into oil. They run the press, manage the stainless steel extraction, and make sure nothing is lost between tree and tank.
