February marks one year since we founded SOLO OLIVES, our mission-driven project to bring truly premium Italian extra virgin olive oil to the United States. What started as a dream between friends has grown into a community centered around quality, craftsmanship, and healthy cooking.

We didn’t start with a business plan. We started with a bottle of olive oil at our dinner table, that was unlike anything we had tasted before.

And we knew we had to share it.

Bringing Authentic Umbrian Olive Oil to the U.S.

SOLO OLIVES was born from a partnership with my good friend Stijn in Umbria, Italy, one of the world’s most respected olive oil regions. Our goal has always been simple:

Make the best early-harvest, high-polyphenol Italian extra virgin olive oil without compromise.

From day one, we committed to:

• Single-origin production
• Early harvest for maximum antioxidants
• Strict oxidation control
• Careful milling temperature management
• Healthy, hand-selected olives
• Sustainable tree care and pruning

These factors define what separates average supermarket oil from premium extra virgin olive oil.

Every bottle represents a year of agricultural work, not just a product on a shelf.

What Makes High-Quality Extra Virgin Olive Oil Different

Most consumers never get to taste olive oil at peak freshness. True fresh Italian olive oil should have:

• A peppery finish in the throat
• Natural bitterness from polyphenols
• Clean, vibrant texture

That peppery sensation isn’t a flaw. It’s a sign of high antioxidant content and early harvest olives. We are proud to say have been able to capture that.

We’ve spent the past year studying the production metrics that protect these qualities. Temperature control, oxygen exposure, harvest timing, and milling speed all matter. We now track these details obsessively.

Because quality is not accidental.

The biggest surprise of year one wasn’t production. It was the people.

Our customers have become a community of home cooks focused on healthy Mediterranean-style eating. Through Instagram, recipes, and monthly updates, we’ve watched people rediscover how powerful good olive oil can be in everyday cooking.

Simple food becomes exceptional when the ingredients are right.

We’re nearly sold out of our first harvest. Only 40 bottles remain from this year’s production.

When they’re gone, they’re gone until the next harvest.

Planning the Next Harvest in Italy

In April, we return to Umbria to plan year two.

We’ll be refining:

• Harvest strategy
• Milling efficiency
• Packaging upgrades
• Label improvements
• A new product line launching later this year (don’t tell anybody 😉 )

Everything is guided by one principle:

make the best olive oil possible for our customers.
