We tend two groves in the hills of Umbria. Every bottle is traced to just one. Two growers, two microclimates, two distinct oils. Here is how to tell them apart, and how to choose.
The Groves

More than 1,200 trees in the hills above Paciano, some one to two hundred years old, tended by organic practice. This grove gives our boldest oil.
Colli del Trasimeno, Umbria
Jury Presenti
In the hills above Lake Trasimeno, a distinct microclimate and a master pruner. Jury was named 2026 national champion at the Forbici d’Oro. This grove gives our elegant, filtered oil.
The Oils
The bold one
Olio Nuovo, Paciano
The first oil of the season, pressed within hours of picking and poured unfiltered. Naturally cloudy and vivid green, it is the rawest, most alive expression of the harvest. Fresh-cut grass, deep green herbs, a pronounced bitterness, and a peppery finish that catches at the back of the throat. It arrives once, straight from the pressing, and it does not keep.
Character: unfiltered, cloudy, bold, high polyphenols.
Pour it raw: over mozzarella, grilled bread, tomatoes, soups, or a finished pasta.
The elegant one
Colli del Trasimeno
Early harvested and freshly pressed, then double filtered for clarity and stability. The result is refined and composed: fresh green fruit, a gentle bitterness, and a clean pepper finish. All the quality of an early harvest, in a smoother, more versatile everyday oil that keeps beautifully.
Character: double filtered, balanced, smooth, elegant.
Use it daily: finishing, dressings, roasting, and everyday cooking.
Which one is right for you?
Choose Olio Nuovo if you love a bold, peppery, green oil and want the raw, unfiltered expression of the harvest. It is a seasonal moment, poured raw and finished quickly.
Choose Colli del Trasimeno if you want an elegant, balanced everyday oil that is smooth, versatile, and keeps well. Or take both, and taste the difference between two groves side by side.
