In the heart of Modena, the Vecchi family continues a tradition that cannot be rushed, only respected.
At AcetoModena, Paolo Vecchi and his son Jacopo care for their acetaia with one guiding principle: time is the only true ingredient. Everything begins in their local vineyards, with Trebbiano and Lambrusco grapes grown under the conditions that have defined this craft for generations.
The grapes are pressed, and the must is slowly cooked down to concentrate its natural sugars and depth. From there, it enters a quiet, patient transformation.
Aging takes place in a succession of wooden barrels made from oak, cherry, chestnut, juniper, and other woods. Each step forward is gradual. Each barrel leaves its mark. Nothing is accelerated, nothing is forced.
Over the years, the balsamic develops naturally into something dense, balanced, and deeply expressive. Layered sweetness, refined acidity, and a long, persistent finish.
For the Extravecchio, this process is not measured in seasons, but in decades.
At least 25 years resting in silence.
What emerges is not just a condiment, but the result of patience carried to its limit. A product shaped entirely by time, devoted to a single purpose: pure, absolute pleasure.
