What makes olio nuovo special
Olio nuovo (“new oil”) is the very first oil of the harvest — pressed from early, green olives and bottled within days, usually unfiltered. It’s vivid green, cloudy, and bursting with grassy, peppery flavor that fades within months.
How it differs from regular olive oil
- Freshness. Olio nuovo is days old; supermarket oil can be a year or more past harvest.
- Filtering. Olio nuovo is often unfiltered, keeping more flavor and polyphenols.
- Flavor. Intense, grassy, peppery vs. mild and flat.
- Availability. Olio nuovo is seasonal — here and gone each autumn.
