But there’s one difference that matters more than almost any other — when the olives were picked. Early-harvest and late-harvest oils are genuinely different products. Here’s what sets them apart, and why the best oils are almost always early harvest.

What is early-harvest olive oil?

Early-harvest olive oil is pressed from olives picked while they’re still green and slightly under-ripe — usually in October. The fruit yields less oil at this stage, which makes it more expensive to produce, but the oil is far higher in polyphenols: the antioxidants responsible for olive oil’s health benefits and its signature peppery bite.

Early harvest vs. late harvest: the real differences

  • Flavor. Early harvest is bright, grassy, bitter, and peppery. Late harvest is milder, buttery, and smoother — but flatter.
  • Polyphenols. Early-harvest oils have dramatically higher antioxidant levels — the compounds linked to heart and brain health.
  • Yield & price. Green olives produce less oil, so early harvest costs more. It’s a quality choice, not a markup.
  • Shelf life. Higher polyphenols act as natural preservatives, so early-harvest oil stays fresher longer.

That peppery kick is a good sign

If a spoonful of olive oil makes you cough, don’t worry — that throat-catching pepperiness comes from a polyphenol called oleocanthal. It’s one of the clearest signs you’re tasting a fresh, early-harvest, high-quality oil rather than a tired supermarket blend.
