From grove to bottle, our olive oil tells a story. It begins with our own journey to Umbria, the moment we first walked through ancient groves and were captivated by the silvery leaves and the scent of green fruit on the branch. Those groves belong to families who have tended them for generations, and they welcomed us into their rhythm.
The work starts long before the harvest. Winter pruning shapes each tree for new growth. In spring, tiny white flowers burst open and the bees go to work. All summer long, farmers watch the weather and worry over the olives as they plump and darken under the Umbrian sun. When early autumn arrives, there is no machine harvest in our world. Each olive is picked by hand using rakes and nets so that no fruit is bruised or left behind. Within hours those olives are pressed in a small frantoio, the mill’s stone wheels turning slowly to coax out the emerald-green oil.
Sustainability is at the heart of our process. We refuse chemical fertilizers or pesticides; instead we mulch, compost, and use natural pest control to keep our trees healthy. The groves are small, but they provide a living for entire families. Protecting that land and those traditions matters to us more than producing huge quantities. Every bottle we fill carries the flavour of a specific hillside and the care of people who live there.
Because we work with such small harvests, each run is unique. We number every bottle and record the harvest date so you know exactly which olives you are tasting. That transparency means you can taste the difference from year to year, even from grove to grove.
