Process
Olives grown by Stijn Taillieu in Umbria are hand-picked at peak ripeness, then washed, freshly-pressed, and gently kneaded at the frantoio. The oil is separated through dual centrifugation, carefully filtered for clarity, and stored under nitrogen to protect its vivid aroma and freshness. Bottled in Italy and flown directly to the United States.
Tasting Notes
A luminous golden-green color opens to aromas of fresh herbs and green almond, followed by flavors of artichoke, balanced bitterness, and a clean, vibrant peppery finish.
